"It's corn!  It's a big lump with knobs, it has the juice,' the song that got stuck in everyone's head in 2022.  However, we're here today not to talk about just any corn, we're here to talk about Elotes.

What is Elotes?

Elote is Spanish for corn. However, in this case, it is Mexican street corn, and it is delicious.   Elotes is grilled corn covered in a mayo sauce, cojita cheese, chili powder, and lime. A lot of times elotes will be prepared off the cobb.

It's definitely a twist on just plain 'ol regular corn.
