
Maestro Taquero Bar & Grill Announces Opening Date on Amarillo’s Route 66
Amarillo is full of great restaurants, and every new one gives us another choice in dining. In June 2025, we shared with you that a new dining experience was coming to Route 66, and we have an opening date.
When and Where to Find Maestro Taquero
Maestro Taquero Bar & Grill will be open to the public on Saturday, July 18. The restaurant is located at 3121 SW 6th Street on historic Route 66.
Maestro completely remodeled the old Austin's Pub and is now offering a unique dining experience on historic Route 66. Although it wasn't officially open during the 100-year celebration of Route 66, it did serve delicious food from its food truck during the celebration. Now is the time to make plans with your favorite person for Saturday.

Maestro Taquero will be serving breakfast/brunch, lunch, and dinner.
What's on the Breakfast and Brunch Menu
Their breakfast/brunch menu includes traditional Mexican breakfast items, including huevos rancheros and chilaquiles, but also unique items like Birria Eggs Benedict and the Pancake Burrito.

As for their lunch and dinner items, you don't want to miss out on their Parrillada La Popular, Jalisco Birria Torta, or their Surf and Turf Tacos.
