9 New Foods to Try at the 2026 Amarillo Tri-State Fair
One of the main reasons people attend the Amarillo Tri-State Fair is the food. Fair food is one of the delights of going to the fair. You stuff yourself silly on traditional fair food like funnel cakes, cheese on a stick, corn dogs, and lemonade. All of those items are a must, but you also have to try all the new foods that are introduced at the fair.
These are the foods that someone has worked on all year long in order to introduce a new twist on a beloved favorite. Think about it: that's how the red velvet funnel cake was invented, or the fried Oreo. So with all the traditional food you are going to be eating at the fair this year, here are some of the new foods you have to enjoy as well.

New Sweet Treats to Try
Black Forest Pastry
This pastry is filled with chocolate pudding and whipped cream and then topped with chocolate toppings.

Fried PB&J
Enjoy a fried peanut butter and jelly sandwich topped with your choice of strawberry, chocolate, caramel, and powdered sugar.

Dubai Funnel Cake
There wasn't a description offered for this, but we assume it is Dubai chocolate, which typically includes chocolate, pistachio, and kataifi. But then again, we may be assuming wrong. You'll have to hunt it down and check it out for yourself.

Deep Fried Hawaiian Rolls
Love a good Hawaiian roll? Now love it fried.

Choose between Mac Attack (yes! a mac and cheese eggroll), boudin, crawfish or gumbo. Now there are some creative eggrolls.
