We love to grill in the summer but sometimes it's just too hot for a big meal, so this salad recipe is perfect for a summer night . Quick, easy, super yummy and very filling !


4 - Grilled and seasoned Chicken breasts ( or any store bought pre cut chicken works too)

1 bag- Baby spinach leaves

1 - can of corn

1- can of black beans

1- bunch of chopped green onion

1- red bell pepper chopped

1- yellow bell pepper chopped

1- bunch of celery chopped

cherry tomatoes


1/2 cup Ranch Dressing ( we used Hidden Valley)

1/2 cup BBQ Sauce ( we used a Stubbs Spicy BBQ )



Heat corn and black beans in a small bowl in microwave for 2 minutes.

Combine Ranch dressing and BBQ sauce in a measuring cup and mix together. Add salt, pepper or red pepper to taste.

Arrange spinach leaves on a plate then top with chopped celery, peppers, onions and tomatoes and croutons.

Spoon on the corn and black bean mixture and top with grilled chicken.

Drizzle the BBQ Ranch dressing over the top and add a sprinkle of black pepper and maybe a squeeze of lemon juice !
