Recipe – It’s Really Not Hard to Make Yogurt at Home
I love making yogurt. I really do. My daughter asked me to grab some yogurt for her and her daughter recently and I said heck, I will make it myself. First of all, it really is better than anything you buy at the store.
You also control the ingredients and know exactly what is in your bowl. It only takes a couple of ingredients and you are ready to go.
You will need:
- A gallon of milk (can be whole milk or 2%)
- starter. You will need the cultures for the yogurt. You can buy them on Amazon or buy unflavored (no fruit) plain yogurt at the store.
- An Instant Pot
- Food Thermometer
- Yogurt strainer or coffee filters
Really that is all you will need to make the best yogurt you will ever have. I will warn you it is a bit time-consuming. The good news is most of the steps are done without any work from you. I promise it is easy.
You will start by pouring a gallon of milk in the Instant Pot. You will turn it on by pushing the Yogurt Button Then you will push "Adjust" until it says "BOIL". You will let it run through the cycle.
When it is done you will check the temperature of the milk. You are trying to get it to 185 degrees. If it is not to that temperature yet no worries just push saute. Let it heat up and stir while it is.
Once you get it to the perfect temperature you will need to cool it down to between 95 and 110 degrees. I do that by putting it in cold water in the sink. I even add some ice cubes. When you get it down to where you want it you will add the starter.
You can add a tablespoon of your plain yogurt, the yogurt cultures you have, or if you have already made yogurt before I would always either take some leftover whey or some of the yogurt in an ice cube tray and freeze until you need it next time.
Stir your starter in and then put the pot back in the Instant Pot. Push the yogurt button and adjust the time. Let it cook for at least 9 hours. I usually make my yogurt in the evening and adjust the time to when I would get up the next morning.
That is it for now. When the time is up you take the whole pot of yogurt and put it in the refrigerator. If you want regular yogurt you are done when it cools off. If you want Greek Yogurt, which is what I make, you will have another step.
Take your yogurt and dump it in the yogurt strainer, or the coffee filters in a bowl. The whey will separate from the yogurt and you will then have Greek Yogurt. I usually let it strain for a few hours.
That is all you have to do. It is now ready to eat. I usually add honey and cinnamon to mine. My daughter adds it to her protein shakes. My granddaughter just eats it straight up and loves it.
