Behind the Scenes Look at Happy State Banks Famous Corn
It's that time of the year. The Amarillo Chamber Good Times Celebration Barbecue Cook Off. It is happening tonight. For the first time we are all heading to the Tri State Fairgrounds to get our barbecue on.
There will still be all the same great things we have grown to love. The food, the drinks, live music from Insufficient Funds and of course the networking. One of the tents that I see almost everyone stop at is the Happy State Bank area. They decided years ago to forgo the usual barbecue. Every tent seems to have that. Happy went with corn. Oh, and it's not just any corn. It is some of the best corn you will ever taste.
Oh and don't forget all the butter and spices to dress it up. I'm telling you that you want to get there early and grab your ear of corn early. They run out every single year. So I decided to go a little behind the scenes with the employees as they spent Tuesday night getting ready for all the corn-i-fied good times.
Almost 2000 ears of corn is delivered to our "secret location" so the tipping and shucking could begin. Then the set up begins. The knives come out. Half the people tip the corn. The other half start shucking. Getting the corn all ready to be steamed in time for Thursday's BBQ.
Now I am going to give you a little secret about the corn. Working there I get the lowdown. The butter that everyone loves. It is not butter. We buy those big gallon jugs of Whirl Oil that is butter flavored. That is what makes the corn so buttery delicious. It is oil.
Then you can sprinkle it with as many toppings as your little heart desires. We have them all. From parmesan, seasoned salt, garlic salt, paprika, lemon pepper, black pepper, crushed red pepper. There are a ton to choose from. You can use a little or use them all.
The Chamber Barbecue is happening this evening and you can make your perfect ear of corn. Just make sure you stop by the Happy State Bank tent.
